10 Minute Dinner

Hi everyone,
Just to let you know a little something about me. I Love to cook and I love to eat great food. But some days there just isn't enough time or energy left for dinner. That's why I always have a few quick and easy recipes to fall back on. (And some pre-cooked chicken in the refrigerator) :)
One my husband & I like a lot is called;

Stir-Fried Chicken with Asparagus
from; Prevention's Diabetes Diet Cookbook

We're not diabetes but I wanted to start cooking a little healthier so I ordered a couple of diabetic cookbooks and we're really enjoying the meals from them.

If asparagus isn't in season you can try it with
green beans also.
I serve this meal with brown rice.
Prep time; 5 minutes      Cook time 5 minutes

2 teaspoons reduced-sodium soy sauce
1 teaspoon honey
2 teaspoons toasted sesame oil
1 large bunch asparagus (about 1 3/4 pounds),
trimmed and cut diagonally into 1" pieces
1 teaspoon minced garlic
2 1/2 cups sliced cooked chicken breasts
1 teaspoon sesame seeds (optional)
In a small bowl, combine the soy sauce and honey.
Set aside.
Heat the oil in a large skillet or wok
over medium-high heat.
Add the asparagus and garlic. Cook for 4 minutes,
stirring frequently.
Toss in the chicken and soy sauce-honey mixture. 
Heat thoroughly.

Sprinkle with sesame seeds, if desired.
Makes 4 servings
per serving: 209 calories, 8 g carbohydrate,
31 g protein, 6 g fat
