If you like Italian or Lasagna you will love Baked Ziti, even if you don't like Lasagna (which I don't) you will like Baked Ziti :)
Sorry this is the only picture I have of Baked Ziti today. :( but, here is your recipe.
Olive Oil Spray
1lb ground turkey
1 (14 1/2 ounce) box fiber-enriched ziti or penne (I use Ronzoiti whole wheat)
1 (15 ounce) fat free ricotta cheese
2 large egg whites
8 ounces finely shredded reduced fat mozzarella cheese
1/4 teaspoon garlic powder
salt, to taste
ground black pepper, to taste
crushed red pepper flakes, to taste
26 ounce jar of marinara sauce (I use organic no added sugar)
2 tablespoons grated reduced fat Parmesan cheese
Preheat the oven to 450 F. Lightly spray a 13x9x2 ceramic or glass baking dish with olive oil spray
Cook the ziti according to directions until al dente. Drain.
In a pan brown and chop ground turkey.
In a large mixing bowl, mix the ricotta, egg whites, and all but 1 cup of the mozzarella until well combined. Add garlic powder and other seasonings. Stir in pasta, meat, and sauce until well combined.
Pour into baking dish. Sprinkle with the remaining mozzarella cheese and the Parmesan cheese over the top.
Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake 10 minutes longer, or until the mozzarella is melted.
Let stand 5 minutes, cut into 8 pieces and serve.
This is very very good and healthy. I am not a fan of ricotta cheese at all but I really like this dish, the ricotta is not to strong.
It also freezes and reheats very well. Since it serves 8 we eat it for dinner the night I make it, reheat leftovers usually 2 nights later and I freeze the other 4 servings 2 servings per dish. When it is time to eat it, I pull it out of the freezer, microwave 5 minutes (in the freezer dish) divide between 2 plates and microwave about 2 more minutes and Waaa Laa Laa baked ziti as good as day 1!
