Hardy Cabbage Soup

I was given 4 very large heads of cabbage from a friend. What to do with all that cabbage? Soup!
I went looking on line for cabbage soup receipts, I found that everyone makes it a little differently. I decided to make some cabbage soup my way.
This is my Hardy Cabbage Soup
 I started with:
2 Tbs Olive Oil
1- lb lean Ground Beef
1- cup Chopped Onion
1- lg Clove of Garlic Chopped 
1/2- cup of Chopped Celery
1/2- cup of Chopped Carrots
1- tsp. Salt
1/2- tsp Pepper
1- tsp Thyme
1- tbs Parsley
Place this all together in a large pot.
Cook until the beef is browned
 1/2- lg Head of Cabbage Chopped about 10 cups
1-28 oz can of Chopped Tomato's
6- cups Chicken Broth
2- cups Tomato Juice
Cover and Simmer for one hour
Turn off heat and let set for 2 more hours covered, this gives time for the flavor to soak into the cabbage.
All that's left to do is enjoy!
Serves 8
This would also freeze well.
